SAFRAN DE LA VALLEE DES HETRES (SAFFRON FROM THE VALLEE DES HETRES)

SAFRAN DE LA VALLEE DES HETRES is a saffron producer in Lorraine. This extremely hardy plant, which can tolerate temperatures as low as -25°C, is a crocus whose magnificent flowers last for two days. It is harvested every morning in October for around five weeks. Only the stigma of the flowers, which are dehydrated and dried at 21°C. are used to obtain the final product, and it takes 200 flowers to produce 1g of saffron. Products on sale include saffron stamens, from 0.1g to 10g or more if required, saffron-infused olive oil, saffron syrup and chocolate with saffron. This saffron is certified ISO 3632 category 1, which determines the quality, flavour, colour and taste of the saffron. Category 1 indicates a high-quality product recognised by top chefs, a measure of the authenticity of this precious spice.
